Recipe#020: Joan's Shortbread

This makes four large wheels of melt-in-your-mouth shortbread. Wrapped in a Scottish tea-towel and topped with a red ribbon, this makes a great Christmas gift.

Ingredients:

1 cup caster sugar
4-5 cups plain flour
1lb unsalted butter.

Instructions:

Cream butter.
Sift flour and sugar together.
Combine ingredients with your hands on counter top.
Divide into four portions.
Knead each portion till cracking of the edges occurs.
[If cracking does not occur, reform into one ball & add 1/2 cup flour by kneading]
Form each portion into a round.
Place on cooking sheet pinch the edge or mark with a fork.
Prick centre with a fork.
Bake at 300ยบ F for 3/4 to 1 hour.
