Recipe#019:Microwave 'Clootie Dumpling'

Here's one for the modern age...

Ingredients:

1 cup water
3/4 cup sugar
1/2 cup sultanas
1/2 cup currants
1 tsp each allspice,cinnamon,ginger
1 tblsp molasses(treacle)
1 cup margarine.
2 cups plain flour
1 tsp baking soda
2 eggs whisked.

Instructions:

Put first 9 ingredients into a medium sized pot and bring to a boil,stirring all the time.
Simmer for one minute and then remove from heat. Let cool a bit.
Then add flour,baking soda and lastly eggs. Stir well.
Prepare a 3pint microwaveable bowl by lining it with cling film. Stretch it over the sides.
Put in mixture. Don't cover.
Cook in microwave(700 watts) for 9 minutes on high.
Let it sit in the microwave for a few minutes.
Leave it to cool then turn onto a plate.
Joan says, "This is not my Granny's dumpling, but it is good!"
